Want something that looks absolutely stunning but requires almost no effort to prepare? Then I have just the thing for you.

Blackberry season is here, and it’s one of my favorite times of the year. If you go for a walk right now, you’ll probably see them growing wild along hedges and on the side of the road – dark, shiny, and practically begging to be picked. A blackberry bush has actually taken root behind our garden shed and crept its way right up to the roof shingles. I had to prune it recently (a pretty prickly business, I can tell you), but at least I ended up with five ripe blackberries to snack on afterward!

Blackberries are usually in season until October, and I love their deep, rich purple color. We used to grow blackberry bushes, too—we had a huge fruit and vegetable garden: strawberries, blackberries, red currants, gooseberries, blueberries (though our chickens usually got to them before we did). Peas, carrots, potatoes, leeks, onions, tomatoes, bell peppers… you name it. Summer meant enjoying our homegrown fruits and vegetables, which of course also meant that everything had to be harvested, usually right after we finished our homework. Let’s just say that snacking was always more fun than harvesting…

But back to this recipe: look at this picture coming your way. Isn’t that the most beautiful dessert you’ve ever seen?! And I want to assure you, this is a real picture I took myself. So what I’m saying is, this is real food photography, and I can confirm that this recipe is genuinely delicious, as I ate it up all by myself.

There are a lot of recipes going around these days that were never actually prepared, cooked, or baked by anyone. Dishes that only exist on screen, showing a meal that has never ever existed. I’m not against new technology, quite the opposite. But when it comes to recipes, I’d love to see real, perfectly unperfect food pictures, and a dish that a real human actually tasted and cooked in real life.

This recipe is a perfect way to make the most of blackberry season: a beautiful dessert you can serve at the end of a nice dinner, or just simply enjoy any time of the day. I’ve heard of people who even enjoy it for breakfast or lunch… who could that be??

Here’s how to make it.

Blackberry Mascarpone Creme

 

 

Why This Recipe Works

  • Ready in 20 minutes, no baking, no fuss
  • Only 5 ingredients, most of which you probably already have
  • Naturally low carb, no refined sugar needs to be added
  • Stunning presentation, the layered ombré effect makes it look far more impressive than it actually is to make

Ingredients (Serves 2)

  • 1 ¼ cups (180g) fresh or frozen blackberries
  • 1 (8 oz / 226 g) package of mascarpone cream, at room temperature
  • 1 cup (240 g) whole milk Greek yogurt
  • 3 tbsp xylitol, or a sweetener of choice (I prefer lower carb sweeteners)
  • 2-3 tbsp of lemon juice
  • A big scoop of love – that’s what makes it taste like home. 🧡

Instructions

  1. Prep the blackberries. If using frozen, let them thaw first. Set aside about 6 whole blackberries for decoration (not for snacking — I know, it’s tempting…). Purée the rest and pass through a sieve to remove the seeds.
  2. Make the cream. In a bowl, mix the mascarpone, yogurt, your choice of sweetener, and lemon juice together until you get a light, fluffy cream.
  3. Create the ombré effect. Divide the cream evenly between three small bowls. To create three different shades, stir 1 tablespoon of the blackberry purée into the first bowl, 2 tablespoons into the second, and 3 tablespoons into the third. Mix each one well.
  4. Layer it up. Choose two nice glasses. Start by spooning in the remaining blackberry sauce, then layer the darkest cream, followed by the medium shade, and finish with the lightest one on top. The colors will blend beautifully into each other.
  5. Decorate and serve. Top each glass with 3 blackberries. That’s it – a heavenly dessert in just 20 minutes!
  6. Hang up the „Do not disturb“ sign. Enjoy your beautiful creation without any distractions.

A Little Note

You don’t need any special skills or equipment for this one, just a bowl, a sieve, and a little patience for the layering. It’s one of those recipes that looks like it took real effort, but the truth is, it comes together in about as much time as it takes to brew a pot of coffee.
